  2.   OVEN-FRIED HERBED POTATOES

  4. 2 Pounds Russet Potatoes, cut into 2-inch cubes
  5. 6 Tbl. Olive oil
  6. 4 Cloves Garlic, minced
  7. 2 Tbl. Minced fresh parsley
  8. 1 tsp. Dried Basil, crumbled
  9. 1 tsp. Dried Oregano, crumbled
  10. Pepper & Salt

  12. Preheat oven to 350 degrees F.  Combine potatoes, oil, garlic, herbs and pepper in large bowl and toss to coat.  Spread potatoes in single layer in baking pan,  Bake until brown and cooked through, turning once about 1 hour.  Season potatoes to taste with salt and serve immediately.
